Watermelon and Avocado Salad



  • 1/2 small watermelon, cut into chunks removing the peel and seeds

  • 1 small avocado, peeled, stoned, diced

  • 1 cup of lettuce, spinach and rockets leaves

  • 150g feta cut into small cubes

  • Juice of 1 lime

  • 1 tbsp olive oil

  • A few sprigs of mint

  • 1 pinch salt and black pepper

  1. Put the salad leaves in a bowl and add watermelon, avocado, radishes, and feta.
  2. Whisk together the lime juice and olive oil, salt and pepper and drizzle over the salad, garnishing with mint leaves.
  3. Enjoy!
