Harissa Chicken with Sald



  • 200g grilled chicken breast, shredded or sliced
  • 1 cup corn
  • 2 carrots, peeled and grated
  • 2 tbsp chopped parsley
  • 2 tbsp chopped fresh mint leaves
  • 1/2 lemon juice
  • 2 tbsp olive Oil
  • 1 tbsp harissa paste
  • 50g sultanas

  1. In a bowl mix chicken, carrots, corn, sultanas, parsley, and mint (optional; handful spinach or kale).
  2. In a separate bowl mix together the lemon juice, olive oil, harissa, salt and pepper to taste.
  3. Pour the harissa dressing over the salad, mix well and place in the fridge for an hour before serving.
