- 200g grilled chicken breast, shredded or sliced
- 1 cup corn
- 2 carrots, peeled and grated
- 2 tbsp chopped parsley
- 2 tbsp chopped fresh mint leaves
- 1/2 lemon juice
- 2 tbsp olive Oil
- 1 tbsp harissa paste
- 50g sultanas

Instructions:
- In a bowl mix chicken, carrots, corn, sultanas, parsley, and mint (optional; handful spinach or kale).
- In a separate bowl mix together the lemon juice, olive oil, harissa, salt and pepper to taste.
- Pour the harissa dressing over the salad, mix well and place in the fridge for an hour before serving.
