Ingredients:
- 1 cup rice noodles
- 1 tbsp olive oil
- 1/2 cup sliced peppers
- Handful sliced spinach
- 2 garlic cloves, chopped
- 1 green onion, chopped
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sesame seeds
- Handful parsley

Instructions:
- Place rice noodles in a pot of boiling water and cook until tender. Remove, strain, and set aside.
- Heat the olive oil in a pan. Add garlic and onion and cook for 1-3 minutes on medium heat. Add the noodles along with the rest of the ingredients (except sesame seeds, parsley and spinach) on medium-low heat and mix well.
- Divide noodles into two bowls. Top with sesame seeds, spinach and parsley.
- Enjoy!
