Sesame Noodle Salad



  • 1 cup rice noodles
  • 1 tbsp olive oil
  • 1/2 cup sliced peppers
  • Handful sliced spinach
  • 2 garlic cloves, chopped
  • 1 green onion, chopped
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • Handful parsley

  1. Place rice noodles in a pot of boiling water and cook until tender. Remove, strain, and set aside.
  2. Heat the olive oil in a pan. Add garlic and onion and cook for 1-3 minutes on medium heat. Add the noodles along with the rest of the ingredients (except sesame seeds, parsley and spinach) on medium-low heat and mix well.
  3. Divide noodles into two bowls. Top with sesame seeds, spinach and parsley.
  4. Enjoy!
