Ingredients:

  • 3 scoops of 1 Up Nutrition Protein
  • ½ cup coconut oil (melted)
  • ½ cup almond flour
  • ¾ cup rolled oats
  • Pinch of sea salt
  • ½ tsp freshly ground grated nutmeg
  • 1 tsp ground cinnamon
  • ½ tsp ground allspice
  • ½ tsp bicarbonate soda
  • 2 tbsp honey
  • 1 large egg, beaten
  • ½ cup blueberries
  • ¼ cup dried cranberries (optional)

Toppings:

Instructions:

  1. Preheat the oven to 160 C
  2. Line a 26 x 16cm cake tin with baking paper
  3. Melt the coconut oil in a small saucepan, then pour into a large bowl
  4. Put all the remaining ingredients apart from the blueberries and cranberries in the bowl and mix to a chunky batter (add water if necessary)
  5. Stir in the blueberries and cranberries
  6. Pour the mixture into the cake tin and spread to an even layer
  7. Bake in the oven for 20-30 minutes or until golden brown and set
  8. Transfer to a wire rack to cool
  9. After 5-10 minutes, cut into 8 bars.
  10. Drizzle i Eat Peanut Butter topping on bars and allow to set, about 15 minutes at room temperature.
  11. Enjoy!
